2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Inspector observed employee dumping and filling sanitizer bucket in the hand sink (server station). COS PIC retrained employee. CA: A handwashing facility may not be used for purposes other than handwashing.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Ice scoop stored (on hook) touching side of ice machine, knives stored between equipment, scoops without handles, scoops with handle touching food product. COS PIC relocated ice scoop and adjusted scoops with handles. COS PIC replaced scoops without handles. CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored:
1.Except as specified under paragraph 2 of this subsection, in the food with their handles above the top of the food and the container;
2.In food that is not time/temperature control for safety food with their handles above the top of the food within containers or equipment that can be closed, such as bins of sugar, flour, or cinnamon;
3.On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized at a frequency specified under DPH Rule 511-6-1-.05(7)(b) and (8)(a);
4.In running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes;

In a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not time/temperature control for safety food; or
-
In a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi).
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Inspector observed a multitude of single-use soy sauce containers reused (bulk containers). CA: Single-service and single-use articles may not be reused. PIC stated he will purchase reusable food grade containers for storage of food/sauce.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(i) - nonfood-contact surfaces (c)
Inspector observed corrugated absorbent egg cartons and absorbent corrugated boxes used for liners throughout the main kitchen. Inspector observed plastic corrugated sheets used as splash guards near the noodle prep station. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(j) - using dressing rooms & lockers, used for changing clothes and storing employee belongings (c)
Inspector observed employee coat on dry food storage shelving. Inspector observed employee drinks without lids on prep/worktables over/adjacent to food. Inspector observed employee phones and keys over prep tables/food. COS PIC relocated employee belongings. CA: Lockers or other suitable facilities shall be used for the orderly storage of employee clothing and other possessions.
