Observed food handling employees not wearing health authority approved hair restraints (employees were wearing visors without hairnets). COS PIC instructed employees change visor to ball caps or wear visors with hairnets. CA: 1. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch. 2. This does not apply to employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food, clean utensils and linens and unwrapped single-service and single-use articles.

Observed 3 compartment sink producing 0 ppm lactic acid sanitizing solution. COS: Adjusted dispenser hose and sanitizer holding bag; new reading 704 to 1875 ppm lactic acid. Advised PIC to ensure that their sanitizing solution maintains 704 to 1875 ppm lactic acid.

Observed employee not wearing hair restraint. Advised PIC that employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.

Observed several dairy products not discarded by manufacturer's date printed on the containers. COS PIC discarded. Advised PIC to discard TCS food products after 7 days or by manufacturer's printed discard date for commercially prepared products.

Observed first aid box of supplies stored in drawer with utensils. COS PIC relocated to office. Advised PIC not to store first aid supplies above or with food/utensils/equipment.
