8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(e) - conditions of use (p, pf, c)
Inspector observed "Home Defense" pesticide located in the facility on shelving used for extra equipment storage. Corrective Action: Manufacturer's use directions included in labeling, and, for a pesticide, manufacturer's label instructions that state that use is allowed in a food service establishment. COS PIC removed from facility.
9-2 - compliance with variance, specialized process and haccp plan
Regulation: 511-6-1.04(6)(k) - reduced oxygen packaging, criteria (p, pf)
Inspector observed freezer stocked with a multitude of meat (in ROP) labeled with dates: 7.15.25 and 7.23.25. NOTE: ROP was performed in the Facility. Corrective Action: ROP must be used within 48hours of packaging until HACCP plan is submitted and approved. COS PIC discarded.
17B - garbage/refuse properly disposed; facilities maintained
Regulation: 511-6-1.06(5)(o),(p) - using drain plugs; maintaining refuse areas (c)
Inspector observed dumpster missing drain plug. Dumpster also in disrepair (cracks around outside of the dumpster unit and broken lid). Corrective Action: Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. Unit should be maintained.
