6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed improper cold holding of potentially hazardous, TCS foods above 41 degrees during inspection. Milk- 44 degrees and Several containers of Heavy Whipping Cream- 44 degrees in reach-in cooler.
CA: Time/Temperature Control for Safety Foods, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, TCS foods shall be maintained at 41°F or below or 135°F or above.
COS: All out of temperature food items were either discarded or relocated to other approved coolers for proper cooling to 41 degrees. Employee was instructed not to use this cooler for cold holding of TCS foods until it has been properly serviced and repaired by a licensed professional and rechecked by the Health Dept. to ensure 41 degrees or below. Documentation is required.
2-2B - proper eating, tasting, drinking, or tobacco use

Observed employee drink without lid and straw stored on 3 compartment sink. CA: Employee drinks shall be from a single service beverage cup with a secure lid and straw that is handled to prevent contamination of the employee’s hands and food contact surfaces. COS: PIC discarded drink and was educated on proper drink use and storage.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed food worker wearing bracelets during inspection. CA: Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. COS: Food worker removed all excessive jewelry onsite
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no test strips provided for chlorine sanitizer. CA: Sanitizing Solutions, Testing Devices. A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. COS: PIC was given test strips to use until new strips can be purchased. This will be rechecked by Health Dept.
