Observation: Observed potentially hazardous TCS food not hot holding at 135 degrees Fahrenheit or above in a steam table on the main service line (Meatball 98F, Meatball 122F).
Corrective Action: Discussed proper hot holding and reheating temperatures and procedures with the PIC. Per the PIC, the meatballs had been reheated and placed in the steam table less than 30 minutes prior. The PIC added water to the steam table and properly reheated the meatballs in the microwave oven (Meatballs 180F, 167F). The PIC will educate staff on proper hot holding and reheating temperatures for meatballs.

Observed several TCS foods cold held above 41 degrees in reach in cooler at front end service. Lettuce 45, tuna 48, sauce 50, and sliced tomatoes 46. All TCS foods cold held above 41 degrees were discarded. CA: All TCS foods at 41 and below were relocated to the walk in cooler. PIC will not use reach in cooler and will have cooler serviced and will notify Health Department when cooler has been serviced to be rechecked.

Observed several TCS foods in reach in cooler and walk-in cooler being held above 41 degrees. Turkey 44, Provolone Cheese 42 in walk in cooler. American cheese 48, sliced beef 47 in reach in cooler. CA: PIC disposed of TCS items from walk-in cooler. TCS foods in reach in cooler had been placed in cooler less than 1 hour and were removed to operating cooler for cooling and cold holding at 41 degrees.

Observed several coolers not maintaining 41 degrees or below; or were not operational. CA: PIC will have coolers repaired/replaced within 48 hours.
