The milk wash must be cooled to 41 deg F or below within 4 hours. The milk wash prepared today was found to be less than 4 hours old and was brought to the walk-in freezer to rapidly cool to 41 deg F. PIC will modify the procedure for preparing this item to ensure the milk wash is properly cooled to 41 deg F before being placed in breading station.
