Observed food hot holding on steam table and in warmer unit held below 135 degrees F. CA: Discussed hot holding and proper reheating of food before placed onto steam table or in warmer unit with pic. COS: pic reheated pulled pork in oven to 171 degrees F, bbq sauce and stew to 191 degrees F on stove top.

Observed personal drinks not in single use cups with lid and straw and stored above prep table. (opened can and cup not single use) CA: Discussed personal drinks with pic. COS: pic discarded personal drinks

Observed bleach sanitizer above maximum ppm allowed. CA: Discussed ppm of chlorine sanitizer allowed with pic. COS: pic diluted and re-tested on several buckets

Observed sanitizer spray bottle with no label. CA: Discussed labeling chemical containers with pic. COS: PIC labeled chemical bottle with common name

Observed diced tomatoes in sealed plastic container in prep cooler at 61 degrees F. CA: Discussed cooling methods with pic. COS: dice tomatoes were transferred to metal pan and cooled properly.
