4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed black buildup on interior surfaces of ice machine. Observed black build up on interior surfaces of soda dispenser guns at bar area. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: CFSM will assign employees to clean and sanitize ice machine and soda dispenser nozzles. This will be rechecked by Health Dept.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed improper date marking procedures for refrigerated, TCS foods during inspection. Several food items such as mashed potatoes, slaw, sliced cheese, and opened packages of deli turkey in reach in coolers not date marked for use within 7 days. CA: Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. COS: CFSM discarded all TCS foods with no date. Employees were educated on proper date marking procedures.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed sanitizer cloth bucket for main kitchen not at proper strength. Bucket measured at less than 100ppm quaternary ammonia. CA: Sanitizer cloths for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration of 200-400ppm for quaternary ammonia. COS: CFSM changed out sanitizer bucket and adjusted to 200ppm quat ammonia as required.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed multiple boxes of single use items such as cups, straws, to-go boxes, etc stored directly on the floor in back storage area. CA: Single-use articles shall be stored in a clean, dry location at least 6 inches above the floor. COS: CFSM relocated all single-use items to shelves off the floor.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no quaternary ammonia test strips provided for checking sanitizer buckets or sanitizer compartment of 3-comp sink. CA: Test strips or other testing device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. COS: CFSM was notified. Quat ammonia test strips will be ordered immediately. This will be rechecked by Health Dept.
