Observation: Observed two containers of cottage cheese with a manufacturer's expiration date of 1/16/26 in the walk-in cooler. CA: TCS foods must be used or discarded by the manufacturer's expiration or sell-by date. COS: The CFSM discarded the containers of cottage cheese and will educate staff on manufacturer's expiration dates for TCS foods.

Observed an opened package of American cheese slices in reach-in cooler date marked 2/19/24. PIC stated that they keep the cheese for 30 days after it has been opened. Corrective Action: Discussed proper 7-day date marking procedure with PIC. Cheese was discarded. Discussed purchasing in smaller quantities or portioning into smaller quantities to freeze.

Observed two half gallon jugs of fat free buttermilk with expiration date 3/4/2024 in walk-in cooler. Corrective Action: Discussed discarding time/temperature control foods after the manufacturer's expiration date or sell-by date. The buttermilk jugs were discarded.

Observed expired CFSM certificate (Charlene Shepherd - Expires 5/12/2019) posted in dining area. Corrective Action: Discussed requirements for posting CFSM certification public view with PIC. PIC will remove expired CFSM and post current CFSM certificate.

Observed CFSM (Tammie Brock) with certification expired greater than 90 days. Corrective Action: Discussed requirements for renewing CFSM certification. Tammie and two additional food service employees are registered for ServeSafe training August 24th, 2023. The Health Department will recheck this in 30 days.

Observed most recent inspection not displayed in the restaurant for public view. The inspection posted in dining room at the time of inspection is for previously permitted facility. Corrective Action: Discussed with PIC. Current inspection report for facility must be posted in public view at all times.
