11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Improper thawing methods observed during inspection. Several packages of frozen, commercially prepackaged chili were stored in warming pass-through unit to thaw. Corrective Action: CFSM was notified. Packages of chili were found to still be frozen at less than 32 degrees. Chili was relocated to double boiler on stove top to be properly reheated to 135 degrees. Employees were educated on proper methods for thawing frozen foods, including placing in reach-in coolers in advance or thawing during the cooking process.
12A - contamination prevented during food preparation, storage, display

Observed ice buildup on floor and on boxes of food in walk in freezer. Corrective Action: CFSM was notified. No direct contamination of food was observed. Discussed relocating all food items away from condensation leak. Walk-In freezer should be serviced by a licensed professional and all ice must be removed. This will be rechecked by the Health Department.
12C - wiping cloths: properly used and stored

Observed sanitizer cloth buckets not at proper strength during inspection. Multiple buckets measured at 0 ppm quat ammonia. Corrective Action: CFSM was notified. It was discovered that sanitizer dispenser at 3-comartment sink was empty. Dispenser was re-filled and all cloth buckets were properly adjusted to 300ppm quat ammonia.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed improper storage of food utensils between uses. Several utensils at cookline were stored in standing water at 71 degrees. Corrective Action: CFSM was notified. All scoops were taken to dishwashing area to be properly washed, rinsed, and sanitized. Employees were educated on storing scoops between uses in a clean, dry location or in water at 135 degrees or above.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed improper storage of single-use items during inspection. Several boxes of straws, to-go boxes, cups, and other items stored directly on floor in outside dry storage building. Corrective Action: CFSM was notified. Employees were assigned to relocate all single use items to shelves off the floor. Single use items must be stored 6 inches off the floor at all times.
