Observed that the hardshell tacos and bowls on the line and that cheeses and elotes in the walk-in cooler were stored uncovered. COS. Covered. Code: Food shall be stored covered.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(o) - medicines, restriction & storage (p, pf)
Observed that zyrtec and creatine were stored over the front-house preparation table and condiments and observed that the first aid kit with medications was stored on top of the ice machine. COS. Removed items. Code: Medications necessary for the health of employees shall be stored in a manner that prevents contamination of food and food contact surfaces.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed containers stacked while wet at the dish pit. COS. Dishes were rearranged to allow for the air drying of the containers. Code: Containers shall be thoroughly air dried prior to stacking.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of ice on the inside of the walk-in freezer. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.

Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed that the wall behind the bar is uneven, unsealed brick that is not easily cleanable. Code: Floors, walls, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings, such as phones, was stored with and above food and food contact surfaces; phones were stored on the shelves above the preparation line. COS. Removed. Code: Employee belongings and activities shall be in designated locations that prevent contamination of food and food contact surfaces.
