Observed hot TCS food stored below 135 F (hot dogs, gyro meat, rice, chicken). COS. To be discarded 4 hours from when it was finished cooking. CA: TCS food that uses hot holding as a control for safety shall be held at 135 F or higher.
1-2B - certified food protection manager
Regulation: 511-6-1.03(3)(c) - certification documentation (pf)
Observed that the facility does not have a certified food manager certification posted in public view. CA: Facility shall have a certified food safety manager and the certification shall be posted.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed prepared TCS foods that were prepared greater than 24 hours ago that were not date marked. COS. Dates added. CA: Prepared TCS food and opened manufactured food shall be labeled with the date of dscard, date of preparation, or both, however, the method of date marking shall remain consistent.

Observed that bottles of non-easily identifiable foods were not labeled with the common name of the product inside. CA: Non-easily identifiable foods shall be labeled with the common name of the product.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(f),(g) - removing mobile food service wastes; flushing a waste retention tank (pf) (c)
Observed that the mobile unit is dripping waste water or some unknown liquids onto the ground. CA: Waste water for a mobile unit shall be properly stored and disposed of.
13A - posted: permit/inspection/choking poster/handwashing
Regulation: 511-6-1.02(1)(d) - displaying of the inspection report (c)
Observed that the facility had posted their previous higher score instead of their most recent score of '57 U'. CA: The most recent inspection report shall be posted in the mobile unit window where it can be read from at least 1 foot away.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed single-use items stored uprightout without overhead protection. CA: Single-use items shall be stored inverted or covered.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee belongings (backpacks and assorted items) stored with and above food and food contact surfaces. COS. Moved. CA: Employee belongings and activities shall be in designated locations that prevent contamination of food and food contact surfaces.
