2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(c) - handwashing sinks, installation (pf, c)
Observed that the self-closing/metering handsinks in the bathrooms do not run for 15 seconds; handsinks only run for 1-2 seconds after being activated. Code: Self-closing/metering facuets shall run for at least 15 seconds without the need to reactive the faucet.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of food and debris on non-food contact surfaces in the kitchen; heaviest accumulation on shelves over the breading station and minor accumulation of debris in reach-in cooler on the line. Code: Non-food contact surfaces shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation accumulation of food and debris on floors, particularly under the dry storage shelves in the main area and under the dry storage shelves in the rear of the building. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
