Observed kitchen staff member wearing a watch while working with food. COS. items removed. Code:With the exception of a plain band ring, no jewelry may be worn on the hands or wrists while preparing food to include medical information bracelets.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(n) - exterior walls and roofs, protective barrier (c)
Observed that the clean linen is stored in an outdoor storage shed that is in disrepair and no longer protects the inside. Code: Perimeter walls and roofs of a food service establishment shall effectively protect the establishment from the weather and the entry of insects, rodents, and other animals.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.5 (2)(jj) - food service equipment, acceptability.
Observed that the facility installed a vegetable and meat sink combo, however, there is no splash guard between the sinks. Code: Food service equipment shall be of appropriate acceptability and meet build standards for food service establishments.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed that some of the ceiling tiles in the kitchen were porous drop ceiling tiles. CA: Floors, walls, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris under shelves, specifically in the outdoor storage area and in the downstairs storage area. CA: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
