Regulation: 511-6-1.05(4)(b) - fixed equipment, spacing or sealing (c)
Observed fixed equipment, counters and sinks, that were not sealed to wall in the main kitchen. Code: Fixed equipment shall be spaced to allow for easy cleaning or be sealed to the wall.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris in equipment, specifically in freezers on the line, reach-in in the downstairs bar, and in the freezer in the alcohol storage area. Code: Equipment shall be thoroughly cleaned and cleaned frequently enough to prevent accumulation.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris on the floors and under shelves/equipment, particularly at bar on the Royal Lanes side and in alcohol area dry storage and walk-in. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
