Observed raw whole beef stored above cooked pasta, sauces, and cooked fish cakes in a reach-in in the main kitchen; observed raw chicken stored above raw whole beef and pork in the walk-in cooler. COS. Reorganized. CA: Food shall be stored according to its internal cook temperature requirements.

Observed that the facility is using time for the hot and cold TCS foods held on the self-service buffet line, however, based on the time and temperature logs present several of the cold items were brought out and placed on time when the items were temped at being above 41 F. Logs present show that this has happened for several days this week. COS. Items to be discarded. CA: When TCS uses time as a public health control, it shall be follow a written plan, be held for no longer than 4 hours if temeprature is not monitored, and the items shall be placed on time at 41 F or below for cold TCS food or 135 F or higher for hot TCS food.

Observed unlabeled spray bottles. COS. Labeled. CA: All working containers of chemicals shall be labeled with the common name of the product.

Observed that the facility had many spray cans of residential pesticide throughout the kitchen. COS. Discarded. CA: All chemicals shall be used according to their conditions of use, including only using residential pesticides in residential settings.

Observed wet wiping cloths stored in kitchen only soapy water. COS. Sanitizer buckets were made. CA: Wet wiping cloths shall be stored in sanitizer solution that is at the appropriate concentration between uses.
