Observed that the facility was washing dishes, putting them through the dishwasher, taking the dishes and putting them back with the dirty dishes, spraying them with the pre-rinse hose again, and then putting them away for use; this resulted in possible dirty water splash and there being no end sanitization step. COS. Dishes were rewashed. CA: Equipment shall be sanitized before use.

Observed that the facility was pulling prepared TCS food from the walk-in and was putting the date that the food was pulled from the walk-in on the containers and not the date that the food was originally prepared. COS. All labels fixed. CA: TCS items held longer than 24 hours shall be marked with their date or prep or date of discard (or both), but date marking shall be consistent throughout the facility.

Observed employees wearing jewelry (watches) while preparing food. COS. Removed. CA: With the exception of a plain band ring, no jewelry may be worn on the hands or wrists while preparing food, to include medical information bracelets.

Observed wet wiping cloths stored on counter and in sanitizer buckets that were not at the appropriate concentration. COS. New sanibuckets were made and wet wiping cloths placed in them. CA: Wet wiping cloths shall be stored in sanitizer solution at the appropriate concentration between uses.
