3-1C - food in good condition, safe, and unadulterated
Regulation: 511-6-1.04(3)(e) - package integrity (pf)
Observed many dented cans. COS. Cans set aside by the inspector to be discarded; after observing 12 dented cans, the PIC agreed to go through all of the cans after service to pull out any remaining dented cans. Code: Food packages shall be in good condition to protect the integrity of the food.
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed hot TCS food (grits, sausage biscuits) that were stored below 135 F; these items are not on the written time as a public health control plan and time was not being tracked, these items were intended to be held hot. COS. To be discarded at the end of service. Code: TCS food that uses hot holding as a control for safety shall be held at 135 F or higher.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris/dried liquids on the floors of both walk-in's. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
