Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
Observed that the base of the 3-compartment sink faucet was leaking. Code: Plumbing system and fixtures shall be maintained in a state of good repair.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Observed that the facility had all of their plates stored upright with no overhead protection. COS. Plates covered with burner plate; discussed with the PIC that only in-use stacks of plates do not have to be covered. Code: Utensils, including plates, shall be protected from overhead contamination by inverting, covering, or using a burner plate.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed accumulation of debris on shelves, particularly on the line where the plates are stored and in the back storage area above the 3-compartment sink; observed that the under side of plates were dirty. Code: Non-food contact surfaces shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed water on the floor of the walk in cooler as well as chipped flooring in the walk in freezer. Code: physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination; facility shall be maintained in a state of good repair.
