Hot water dishwasher was only reaching 118F on the plate on the sanitizing step, PIC mixed up the sanitizing basin of the 3 comp and placed all dishes into sanitizer after washing and rinsing. Hot water dishwashers shall have water that is 160F or higher on the plate.

3 Comp sink had an empty sanitizer container and was not putting out proper sanitizer amount into the basin. PIC replaced the sanitizer and 3 comp read 200pm quat.

Observed waffle batter containers stored as clean that still had waffle batter on them, observed plates stored as clean that had food residue on them. PIC removed all dishes and placed them in warewashing to be washed, rinsed, and sanitized.
