2-1B - hands clean and properly washed
Regulation: 511-6-1.03(5)(c) - when to wash (p)
Employees shall wash hands when changing tasks such as when going from raw to ready to eat, or when going from handling money or cleaning to handling food. Observed employee switch from working with raw shrimp to handling containers of cooked, ready-to-eat food without first washing hands. PIC instructed employee to wash hands properly and foods were discarded.
