4-1A - food separated and protected

Observed raw beef steaks stored over cooked crab dip. Observed raw scallops stored over cooked fish dip. Observed raw ground beef stored over raw fish. COS raw beef steaks were moved to bottom of reach in. Raw scallops were moved to bottom of a different cooler. Raw fished was moved above raw ground beef. All raw foods should be stored under ready to eat foods. Raw foods shall be stored and stacked according to their final cook temperature.

Observed crab dip, fish dip, pasta, and coleslaw held over 24 hours without date marking. COS instructed PIC to date mark all TCS foods held over 24 hours.
