Observed two compartments of the 3 compartment sink being used to thaw frozen foods. Foods were in standing water without running draining water. PIC drained compartments and turned on faucets so that foods were being thawed under running water that was less than 70F. All foods were less than 41F.

Test strips for chemical sanitizer shall be available in the establishment. Establishment uses sink and surface sanitizer in the 3 compartment sink. Establishment had test strips for chlorine, quat, and vegetable wash but not for sink and surface. PIC ordered correct test strips during inspection

Mechanical dishwashers shall dispense the correct amount of chemical sanitizer. Main kitchen dishwasher and bar dishwasher were reading 0ppm chlorine after running a full cycle. Main dishwasher had an empty container of low temp sanitizer hooked to it. PIC replaced sanitizer and primed dishwasher and it read 100ppm. Bar dishwasher was primed and also read 100ppm.
