Observed food (potato soup) stored in freezer on the floor under the shelving.
RCA: PIC will ensure that all products are 6 inches off the ground to prevent potential contamination.
12B - personal cleanliness
Regulation: 511-6-1.03(5)(g) - jewelry (c)
Observed multiple employees wearing watches and prepping food items.
RCA: Ensure no employee involved in food preparation has jewelry, watches, wristbands of any kind.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed utensil used to stir marinara sauce and meatballs stored in water that did not reach 135F (was observed at 72F).
RCA: Clean regularly (every 4 hrs)and store in container with no water, or have water running continuously, or store in water at 135F concurrently.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee pizza and drinks stored in walk in cooler above food product.
RCA: Move employee items to ensure they are stored low and away from any food product to prevent contamination.
