4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed ice machine to have a buildup of mildew-like substance and other rust debris on the inner edge of unit.
RCA: Clean machine regularly to prevent buildup and contamination of ice.
12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(q) - food storage (c)
Observed various food items throughout the facility sitting on the floor (oil, soy sauce, raw chicken close to foot level).
RCA: Move at least 6 in off the floor to prevent contamination.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed hot water to be below 85F (at 80) in the men's and women's restroom.
RCA: Repair hot water heater to provide water at 85F or above.
14A - in-use utensils: properly stored
Regulation: 511-6-1.04(4)(k) - in-use utensils, between-use storage (c)
Observed cups being used as scoops in dry storage as well as handle stored in food product. Observed ice cream scoop being used in water below 135F.
RCA: Handles will be stored above the food product and only scoops with handles will be used to eliminate contamination. CA: Employee removed scoop from water and replaced water. Cleaned the scoop and will clean each time it is used.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed a need for cleaning on walls, floors, ceilings, and equipment exteriors that have a dust buildup, staining, or food splatter/debris. Observed shelving in back of house with excessive dust and rusting.
RCA: Clean facility regularly to eliminate chance of contamination with food.
