6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed a Reach In Cooler not capable of holding food items 41 degrees F or lower.
CA: TCS items that were in the unit for over 24 hour were discarded by PIC. Other non TCS item were moved into another cooler that was capable of holding the items at 41 degrees F or lower. A work order was placed and the unit cannot be used until repaired AND approved by Effingham EH.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed dirt and food splatter on walls and floors throughout the kitchen.
