4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed quaternary ammonium sanitizer at the three-compartment sink was not dispensing properly. Upon further investigation, it was determined that the sanitizer container was empty and required replacement. The Person in Charge (PIC) instructed an employee to replace the sanitizer. After replacement, the Environmental Health (EH) inspector tested the solution using test strips and confirmed it was at the proper concentration.
