Observed several bins of sliced yellow cheese prepared yesterday, in pass thru cooler, a container of sliced yellow cheese in 2 door reach in cooler, cheese, lettuce and butter in walk in cooler of main kitchen cold holding at temperatures greater than 41 degrees F. CA: Cold held TCS food must be held at 41 degrees or below. COS: PIC discarded cheese products

Observed 2 containers of sliced cheese, 1 container of shred cheese, 2 containers of lettuce and a container of sliced tomatoes on time without the 4 hours time marked. CA: If time as a public health control is used, the food must be marked with the time that is 4 hours past the point in time when the food is rendered a time/temperature control for safety food. COS:PIC re-labeled foods
