6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following cold holding at temperatures greater than 41 degrees in prep top cooler: sliced cheese, pepperoni, salami, and beef. CA: TCS foods must be cold held at 41 degrees F or below. COS: PIC covered foods to cool to 4 degrees.

Observed prepped sliced ham and roast beef in walk in cooler not cooling fast enough to reach 41 degrees F in 4 hours. CA: TCS foos must be cooled to 41 degrees within 4 hours. COS:PIC moved prepped foods to freezer
