OBSERVED 2 SODA GUN NOZZLES IN THE FRONT FOOD SERVICE/BAR AREA WITH DARK DEBRIS. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS: FOOD EMPLOYEE CLEANED NOZZLES
6-2 - proper date marking and disposition

OBSERVED INCONSISTENT DATE MARKING THROUGHOUT THE FACILITY. CA: refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1. Pf COS: PIC TOSSED ITEMS.

OBSERVED SHRIMP BEING THAWED AT ROOM TEMPERATURE IN THE MAIN KITCHEN. CA: Thawing. Except as specified in paragraph 4 of this subsection, time/temperature control for safety food shall be thawed:

Under refrigeration that maintains the food temperature at 41°F (5°C) or less; PF or
-
Completely submerged under running water:
(i) At a water temperature of 70°F (21°C) or below, PF
(ii) With sufficient water velocity to agitate and float off loose particles in an overflow PF,

OBSERVED SEVERAL PLASTIC AND STAINLESS STEEL CONTAINERS STACKED WET IN THE MAIN KITCHEN WAREWASHING AREA. CA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:
- Shall be air-dried or used after adequate draining before contact with food; and 2. May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

OBSERVED MISALIGNED AND MISSING CEILING TILES IN THE MAIN KITCHEN. CA: All physical facilities shall be maintained in good repair.
