Routine
7-1 - pasteurized foods used: prohibited foods not offered
Regulation: 511-6-1.04(9) - pasteurized foods, prohibited re-service and prohibited foods not offered (p, c)
Observed raw shelled eggs used in the facility. PIC stated that she uses them to mix with the liquid eggs. PIC had a batch of cooked scrambled eggs just sitting to be served to residents. CA: Pasteurized eggs or egg products shall be substituted for raw eggs in the preparation of:
(i) Foods such as Caesar salad, hollandaise or Béarnaise sauce, mayonnaise, meringue, eggnog, ice cream, and egg-fortified beverages, P and
(ii) Except as specified in paragraph 6 of this subsection, recipes in which more than one egg is broken and the eggs are combined. PIC was informed that she must use pasteurized egg products for the residents. Informed PIC about the rules of raw eggs and she verbally understood.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed expired test strips in the facility dated 12/2025. CA: In manual warewashing operations, a temperature measuring device shall be provided and readily accessible for frequently measuring the washing and sanitizing temperatures. PIC will have new test strips purchased ASAP.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed grease build up on the vent hood. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. PIC will have vent hood cleaned.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(2)(i) - light bulbs, protective shielding (c)
Observed light bulb under the vent hood not covered with a shield and three other light fixtures in the main kitchen area not covered with a shield or protective sleeves. CA: Except as specified in paragraph 2 of this subsection, light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service and single-use articles. PIC will have light bulbs shielded ASAP.
