Observed bags of mozzarella cheese in the walk-in cooler maintained above 41 degrees Fahrenheit. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. PIC discarded all food items and will have walk in cooler serviced.

Observed items (flour and seasonings) stored on the ground. CA: Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food: At least 6 inches (15 cm) above the floor. PIC properly stored food items.
