PIC will put on a beard restraint.

CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. PIC removed items from service.

PIC removed the pizzas from the front food service line.

CA: Dead or trapped birds, insects, rodents, and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests. PIC will have the dead pests removed from dry storage room.

Observed rodent activity as evidenced by rodent dropping found in dry storage area. CA: The presence of insects, rodents, and other pests shall be controlled to minimize their presence on the premises by: routinely inspecting incoming shipments of food and supplies; routinely inspecting the premises for evidence of pests; using methods, if pests are found, such as trapping devices or other means of pest control as specified under subsections (6)(e), (6)(m), and (6)(n) of this Rule; and eliminating harborage conditions. PIC will contact a pest control company.

Observed no hot water at the prep sink in the back of the main kitchen. CA: Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment. PIC will have prep sink repaired to restore hot water.

Observed trashcan in unisex bathroom without a lid. CA: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins. PIC will make sure the lid remains on the trashcan.

Observed an accumulation of trash surrounding the dumpsters outside. CA: Refuse, recyclables, and returnable shall be removed from the premises at a frequency that will minimize the development of objectionable odors and other conditions that attract or harbor insects and rodents. PIC will have the trash picked up and placed in the dumpster.

Observed fans in the main kitchen with an accumulation of dust. CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. PIC will have fans cleaned.
