Observed produce sink stacked with dirty pans and utensils. COS items were removed and sink cleaned and sanitized. CA. Equipment food-contact surfaces and utensils shall be clean to sight and touch.
6-2 - proper date marking and disposition

Observed TCS foods (cooked green beans with turkey, potato salad, beef sausage) with no date marking, items were reported to have been cooked previous day. COS. Items were date marked. CA. Refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold, or discarded, when held at a temperature of 41°F (5°C) or below for a maximum of 7 days. The day of preparation shall be counted as Day 1.

Observed grease and debris buildup on equipment (fryers, hood, flat top) and inside of microwave and shelves with excessive debris. CA. Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Observed storage carts and shelves with unwanted/ unnecessary items. CA. The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used and litter.
