4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw cut beef store above ready to eat food (cooked spaghetti) and sauce in the M3 Turbo air reach in cooler. Observed raw beef store on top of fresh vegetables( green bell pepper) in the walk in cooler. CA: Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables. COS: Raw beef was store below ready to eat items in the reach in cooler and beef in the walk in cooler was removed from the fresh vegetable.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(b) - hand drying provision (pf)
Observed no paper towel at the main kitchen hand sink. CA: Each handwashing sink or group of adjacent handwashing sinks shall be provided with: Individual, disposable towels; A continuous towel system that supplies the user with a clean towel. COS: Paper towel was provided.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.07(3)(a) - handwashing cleanser, availability (pf)
Observed no handwashing cleanser available at the main kitchen hand sink. CA:ach handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS: Liquid soap was provided at the hand sink.
2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink located in the main kitchen to be blocked with an empty container inside the sink( upon washing hands to conduct a health inspection). CA: A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: Item was removed from the sink. ** see attached picture.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee items (such as phones) stored next to food seasonings inside the main kitchen and drinks at the bar area. CA: Informed to have designated areas in cooler for personal items only, to prevent contamination of food items for service. COS: Drinks and other personal items were rearrange in the walk in cooler.
