Observed pre-made salad trays in the walk-in freezer were not maintaining a temperature of 41°F or below and were tightly wrapped. CA: Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Salads were uncovered to cool properly.

Observed TCS foods being stored in the walk in freezer not cold holding at 41F or below. Observed milk and brown rice not cold holding at 41F or below. Discussed the following: Place milk cartons on ice and/or relocate them to the walk in freezer or beverage air cooler to cool more rapidly. Separate brown rice into smaller metal container. Ca: time/temperature control for safety food shall be maintained at 41°F (5°C).

Observed salad mix being stored in the Hobart reach in cooler that has a ambient temperature of 58.3F. Salad just prepared at 10:45AM is 55F. Advised PIC to relocate salad to walk in freezer to cool more rapidly.
