Observed live roaches crawling in areas of the main kitchen. Observed roach feces near main kitchen sink. PIC could not provide pest control during inspection. Please email current pest control to Keyandra.Turner1@dph.ga.gov. CA: 1. Routinely inspecting incoming shipments of food and supplies; 2. Routinely inspecting the premises for evidence of pests; Using methods, if pests are found, such as trapping devices or other means of pest control. Eliminating harborage conditions.

Hot water pressure lacking at fixtures that require the use of water. CA: The water source and system shall be of sufficient capacity to meet the peak water demands of the food service establishment. Hot water generation and distribution systems shall be sufficient to meet the peak hot water demands throughout the food service establishment.

Observed no hand soap at hand sink upon arrival. Ca: (a) Handwashing Cleanser, Availability. Each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. COS employee supplies hand soap dispenser.

Observed a heavy accumulation of dust and debris on the ceiling tile. Ca: Floors, Walls, and Ceilings, Cleanability. Except as specified under subsection (2)(d) of this Rule and except for anti-slip floor coverings or applications that may be used for safety reasons, floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable.

Observed whole snapper fish being improperly thawed in the sink. Observed shrimp being thawed in a pitcher of water. COS food handler runs water over fish and removes shrimp from pitcher and begins to cook it. Discussed the following: food shall be thawed:

1. Under refrigeration that maintains the food temperature at 41°F (5°C) or less; or 2. Completely submerged under running water: (i) At a water temperature of 70°F (21°C) or below.
