Observed 4 bags of raw wings cold holding at greater than 41 degrees Fahrenheit. The person in charge stated that the cooler was turned off during her time of cleaning. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F.
