Observed that an employee engaged in food-preparation was wearing bracelets. CA: Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food.
12C - wiping cloths: properly used and stored
Regulation: 511-6-1.04(4)(m) - wiping cloths, use limitation (c)
Observed sanitizer solution (Quat) reading in sanitizing buckets to be 100ppm (performed two different readings in two different buckets). CA: Cloths in-use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n). CO: PIC adjusted sanitizing solution and brought Quat level up to 200ppm.
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed that facility did not have test strips to test sanitizing solutions in three-compartment sink and sanitizing sinks. CA: A test kit or other device that accurately measures the concentration in mg/L of sanitizing solutions shall be provided. Facility should obtain appropriate testing strips and send photo of testing strips in their proper location to inspector by Friday, February 7, 2026.
