Observed facility doesn't have any certified food safety manager. Person in charge enrolled for ServSafe. CA: Discussed with the person in charge that food service establishments shall have in its employ a Certified Food Safety Manager (CFSM) to ensure food safety is being managed within the food service establishment during all hours of operation.

Observed food employee washed potatoes in the meat sink and was using meat sink drainboard to cut the potatoes. CA: Discussed with the person in charge that a produce sink should only be used for washing and prepping produce. And a meat sink is only for washing and prepping meat.

PIC was unable to provide proper documentation nor prove for employee health policy in reporting illness. CA: Informed PIC to have a proper documentation form where all employee are trained and knowledgeable about reporting any form of illness. PIC shall reference the "Employee Illness quick decision guide for food establishment person in charge." Must be corrected by 2/23/2024 and send prove via email at zion.kenan1@dph.ga.gov

Observed raw meat being thawed in the vegetable sink with running water. CA: Only vegetable shall be used in the vegetable sink and meat sink is used for only meat or seafood and sanitize the vegetable sink. COS: Employee cleans and sanitize the vegetable sink

Observed frozen green beans thawing at room temperature. CA: Frozen food shall be thaw in the fridge/cooler, running water of 70F, microwave (with immediate cook) and as the cooking temperature. COS- beans were placed in pot to cook.

Observed dry storage shelves to be rusted, as well as the rare two door cooler. CA: Informed PIC to resurface the shelves or replace them together with the two door cooler.

Observed the Traulsen two door freezer gasket and the two door cooler and plate holding cabinet to be unclean to sight and tough. CA: Informed PIC to clean out gasket and other equipment in the kitchen.
