Observed unclean can opener blade. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC voluntarily placed the can opener blade in three compartment sink to be washed.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(2)(m) - outer openings protected (c)
Observed no seal and light shining through the bottom of the main entrance door.
CA: Outer openings of a food service establishment shall be protected against the entry of insects and rodents by solid, self-closing, tight-fitting doors.
PIC assured the door seal will be fixed as soon as possible.
18 - insects, rodents, and animals not present
Regulation: 511-6-1.07(5)(l) - removing dead or trapped birds, insects, rodents, and other pest (c)
Observed roughly four dead roaches and what appeared to be countless dead fruit flies in the corner near the exit door in the back.
CA: Dead insects and other pests shall be removed from control devices and the premises at a frequency that prevents their accumulation, decomposition, or the attraction of pests.
PIC assured the dead insects will be removed today after facility closes.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed single-use yogurt containers being reused to store sauces like mint sauce and tikka sauce.
CA: Single-service and single-use articles may not be reused.
Discussed with PIC to transfer sauces to commercial grade containers and discard the single-use yogurt containers as soon as possible.
