Ca: When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be: (i) Arranged in the equipment to provide maximum heat transfer through the container walls; and (ii) Loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. Observed American sliced cheese not cold holding at 41F or below (see * in temperature log). Observed milk delivered today not cold holding at 41F or below. COS person in charge relocates milk to walk in freezer to cool more rapidly.

Observed interior of ice machine unclean to sight and touch with a pinkish residue on the liner where the ice is dispensed. As discussed with PIC that the ice machine shall be cleaned more frequently and to burn ice then wash, rinse and sanitize ice machine immediately before use.
