4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Equipment Food-Contact Surfaces and Utensils. Equipment is used for storage of packaged or unpackaged food, such as a reach-in refrigerator, and the equipment is cleaned at a frequency necessary to preclude accumulation of soil residues. Observed unopen packets of raw ground beef stored directly on an accumulation of blood residue on bottom floor area of prep top cooler in main kitchen. Person in Charge was advised to wash, rinse and sanitize said area and send pictures to inspector via email by 1/20/26.
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(r) - system maintained in good repair (p, c)
System Maintained in Good Repair. A plumbing system shall be repaired according to law; and maintained in good repair. Observed leak dripping onto bucket from indirect waste line from hand wash sink in kitchen. Person In Charge was advised to have leak repaired by a licensed plumber and send invoice to inspector via email by 1/20/26.
14A - in-use utensils: properly stored

Storage of In-Use Utensils. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored, in the food with their handles above the top of the food and the container, in running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes. Observed ice cream scoop used with moist food not stored in running water of sufficient velocity to flush particulates to the drain. COS: Person in Charge (PIC) removed said utensils to be washed , rinsed and sanitized and stored in a clean food storage pan.
