6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS items in the prep top cooler near the grill cold holding at temperatures above 41F. Items like coleslaw, melon mix, sliced tomatoes,chopped tomatoes, potato salad, shredded mozzarella, goat cheese, and pico. The ambient temperatures of the cooler were reaching 51F at the top and at the bottom. PIC stated that foods were prepared less than 4 hours ago.
CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below
COS: PIC moved all the TCS of foods into walk-in freezer. Advised PIC not to use the cooler to hold any TCS foods until the cooler is holding at 41F or below. PIC will put another service request in to fix the cooler. Advised to keep the cooler door closed as much as possible.
