CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: yogurt and cheese sticks relocated to walk in cooler.

Observed opened packages of TCS foods that require date marking (sliced American cheese and sliced deli turkey) not discarded after 7 days of being opened/prepared, located in the walk-in-cooler. Observed both the sliced American cheese and sliced deli turkey date marked with a "prepared date" of 11/14/23 (today is 11/28/23). CA: Opened or prepared foods that require date marking shall be used or discarded within 7 days. The day the food item was opened or prepared counts as the first day. COS: The PIC discarded both food items.
