2-2D - adequate handwashing facilities supplied & accessible
Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Using a Handwashing Sink. A handwashing sink shall be maintained so that it is accessible at all times for employee use. Observed hand wash sink in food prep area obstructed by a large black garbage can in kitchen and Sushi rice storage container in front sushi prep area, therefore deeming the sinks in accessible. Food worker will have to moves said items from in front of both sinks in order to adequately wash their hands. COS: PIC removed said items and found a suitable storage area for them.
4-2B - food-contact surfaces: cleaned & sanitized

Cleaning of Equipment and Utensils. Equipment, Food-Contact Surfaces, and Utensils. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Observed food worker pre-rising dirty utensils and washing hands in fruit and vegetable prep sink in kitchen. COS: PIC had food worker wash their hands at the hand wash sink and wash, rinse and sanitize the fruit and vegetable sink.

Jewelry. Except for a plain ring such as a wedding band food employees may not wear jewelry including medical information jewelry on their arms and hands while preparing food. Observed staff wearing watches and bracelets while prepping sushi in the front sushi prep area . COS: PIC informed employees that they may not wear any jewelry except for a plain band while preparing food.
