Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed 0ppm chemical sanitizer residual reading in solution at three compartment sink. Also observed utensil not fully submerged in sanitizer solution at 3 compartment sink. COS. Sanitizer solution was remade to 300ppm quat and utensils re-introduced. CA. A chemical sanitizer used in a sanitizing solution for a manual or mechanical operation shall be used in accordance with the Environmental Protection Agency (EPA)-registered label use instructions (200-400ppm)

Observed condensation from RIC cooler dripping onto covers of pans with collards green and turkey wings in main kitchen. COS Items were moved from direct dripping sites.
