17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed food splatter and debris on walls in the main kitchen. CA: All physical facilities shall be maintained in good repair. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(h) - dressing areas and lockers, designated and provided (c)
Observed food employees' backpacks and jackets stored on top of boxes of food items and inventory. CA: Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions. COS: Food employee removed stored belongings from on top of the boxes of food items and moved them to the designated employee area.
