Observed received food not meeting minimum temperature of 135°F (57°C) or above. Foods are in warmer cabinet with max heat setting. Prior to receiving foods need to be tempt with a calibrated thermometer to ensure proper temperature control.

Observed food being placed inside the reach in warmer to reheat. The reach in warmer does not have the capacity to reheat food within the allotted time frame.
Reheating for hot holding shall be done rapidly and the time the food is between the temperatures of 41°F (5°C) and 165°F (74°C) and 41°F (5°C) and 135°F (57°C) for commercially processed food, may not exceed 2 hours.
CFSM is changing meal to day of delivery.
