Observed lettuce and tomatoes cooling and tightly covered at temperatures above 41F in the walk in cooler. Observed lettuce and tomatoes being placed on front line prep top cooler without proper cooling methods. PIC stated that the lettuce and tomato was prepped an hour and a half prior to inspection. CA: When placed in cooling or cold holding equipment, food containers in which food is being cooled shall be Loosely covered, or uncovered if protected from overhead contamination during the cooling period. COS: Discussed with PIC that the lettuce and tomato must be uncovered in the walk in cooler to help the cooling process. PIC uncovered the prepped lettuce and tomato and also put ice and water in the prep top coolers to help the TCS food cool properly. Observed majority of TCS foods properly cooled to 41F or below after being cooled uncovered in walk in cooler and freezer. One set of lettuce in a metal pan and one set of tomatoes in a metal pan did not cool to 41F or below and was thrown out.
